Penne with vegetables



Ingredients:
1 packet noodles
1 tomato
2 pcs. carrots
2 pcs. pepper
1 onion
200 g mushrooms
150 g spinach
vegetable oil
salt
Black pepper

For the sauce:

400 ml milk
2 tablespoons flour
1 tablespoon cooking oil
2 tablespoons butter
salt
Grated cheese on top


First, fry the vegetables begin by the onion and carrots. After a while add peppers, mushrooms later, and finally tomatoes and spinach. When the spinach is cooked remove from the oven.

Then prepare the Bechamel sause as fry 2 tbsp meal with as much oil and butter. Once the flour and fry starts to distribute smell of fried flour add the cold milk and mix it constantly.

Cooked pasta, vegetables and beshameloviya sauce mix in pan and sprinkle with nastragan cheese and bake at preheated oven.

Princess cake



 Ingredients:
4 eggs
1 cup sugar
1 cup yougurt
125 gr butter
2 cups flour
baking powder
vanilla
walnuts
cherry jam

For the topping:
4 egg whites
sugar

First whisk the eggs together with sugar and after that add the yogurt and butter. Mix the dryg ingredients together (flour, vanilla, baking powder) and start adding it to the eggs with a spoon and keep on mixing. When your cake dough is ready, put it on a tray, add some walnuts and bake it in 170 degrees.


At the time while waiting for the cake to be ready you can prepare the topping with 4 eggs whites and powder sugar.
When the cake is ready place some cherry jams on the cake and add the topping with a spoon. Bake it until the egg whites gets brown.

Bulgarian guvec recipe


Ingredients :
1 coarsely chopped onion
200-300 grams of chicken cut into small pieces
2 carrots - also cut into rings
bowl with mushrooms
salt
black pepper
savory
fresh parsley
homemade ketchup (or tomato puree )
4-5 larger potatoes
can of tomato and pepper
5-6 eggs
cheese

Part of the products are fried in a pan by first start with the onion , then chicken, mushrooms and carrots ( and salt). These steps are skipped them in the video for which I beg you to forgive me : P. Place a little water when  it's done and add chopped fresh parsley and pepper. Once this is mixed divide it equally in small clay pot called guvech (in our case 6). Leave some of the " broth " .  In that broth dissolve spoon of  homemade ketchup (or puree ) and add some water. Leave it aside . then we'll use it .

Peel the potatoes and cut them into large pieces and fry them . Once ready , add a little salt , pepper and savory . Distribute them in gyuvechetata .
Top put a can of tomatoes and pepper. It is prepared by mom, and it is boiled pepper in tomato sause. Then add and " broth " which have prepared earlier .
In the middle of clay pots form a "hole" where to put the egg yolk would otherwise escape sideways. And without adding  eggs and place them to the oven for 15 -20 minutes after  place the eggs and cheese cut into little pieces.
Bake another 5-10 minutes and gyuvechetata ready :)

Rainbow Cake



It seems difficult , but it is very easy. It took very little time , the only difficulty is in finding a dye for coloring wafer books.

Ingredients :
8 eggs
1 cup of yogurt sugar
1 cup of yogurt meal (if it is too liquid , you can add a little more )
3-4 tablespoons oil
1 baking powder
1 vanilla

cream top ( between wafer books ) is puding cream , mix with whipped cream .
First whisk the eggs with sugar. If sections yolks from egg whites and break them down individually will get better results , because the time to mix the yolk and whites vary accordingly, so  if they mix individually will get fluffy .
Then add flour, baking powder , oil and vanilla and mix well.
The mixture is then divided into six equal parts , as it depends on the number of cake layers that you want to receive and mix the dye.
Then bake the cake, which is a bit difficult because of the dye it is a bit difficult to determine exactly when they are ready.

Then the cream is prepared. As I said earlier we used whipped cream and pudding and we didn’t use any syrup for cake layers, because we use pudding. 


Tiramisu recipe



We decided to post it in icecream cups so it is easier to serve.

Recipe is very easy to make.

You need:
500 g mascarpone cheese
4 fresh eggs
400 g biscuits (actually we used less than it is on the recipe)
120 g sugar
cocoa
2 tablespoons instant coffee

To prepare the biscuits you will need a “sause” with Nescafe <instant café>,  sugar and water. You need to dip the biscuits in the Nescafe for a second and then place them into the cups you will serve the tiramisu.
for the cream
Separate the egg whites from yolks of the 4 eggs and mix separately yolks and whites with 60 grams of sugar for each . Then in the bowl of beaten yolks add mascarpone cheese and stir ( better still with a mixer because otherwise it takes too long ) . Finally add and beaten  egg white , but it has to be stirred with a wooden spoon and only in one direction.
Then put the cream in cups. And sprinkle with cocoa. And it is better to put cocoa in serving - it will look better.

Kebab with spinach

kebab is made from :
400 g minced meat
4-5 slices of bread
a little milk
1 egg
1 onion ( grated )
salt
black pepper

Meat is kneaded and placed at the bottom of a pan and bake it on oven of 180 degrees. When it is almost ready u can add the topping with spinach.
topping :
2 tablespoons flour
glass of milk
100 g mushrooms
500 g spinach
1 chopped onion
1 pepper
shredded cheese
salt

Fry the onions  on little oil first then add the mushrooms and pepper. Later add spinach after  itgets cooked put the flour and milk and add salt.
Pour meatball with topping evenly on top and sprinkle with cheese then bake in the oven for another 10 minutes.

Cupcakes Day and Night



Ingredients:
the white mixture:
110 g cream cheese (unsalted)
30 g sugar
1 vanilla
1 egg

For black mixture:
200 g flour
200 g sugar
30 g cocoa
1 teaspoon baking soda
Pinch of salt
240 ml water
80 ml oil
1 tablespoon vinegar

 


Separately mix white and black mixture. To make the white mixture first mix cream cheese with the egg and sugar then added and vanilla. Use mixer for this part.
For the black mixture is first sift flour, sugar, salt, soda and cocoa. After that add the liquid ingredients and mix it manually.
The black mixture was partitioned in bowls (or top shape and put a spoonful of white mixture). Bake at 170 ° C, pre-heated oven.

Sarma

Sarma is our family tradition on special days, holidays and every event when the whole family is together. Here is the recipe of our sarma.

Make the filling


It takes
1. onion
broth (optional)
water
150 g bulgur
150 g rice

Chop finely and fry in tendzheta then add water and broth and allow to boil water. After that rice is first added and after 5 min the bulgur . If the water is not enough , you can add a little more.

Once the rice is ready to put in a large pot where added :
1-2 eggs
mint (if fresh even better )
black pepper
cheese
1-2 tablespoons chutney
Salt
Other spices that you like

Mix well .
 
Then in the bottom of the pan put  2-3 rows vine leaves . After being wound in the manner and Sarmite shown below in the clip.
Sarmite arrange in pan. Pour necessarily with olive oil, if you use normal oil sarma will become sour and leaes won’t be as soft as it would be with olive oil. One sugar and a little water, and place 2-3 rows of leaves  and put  a plate on top, so they wont open while boiling

Boil it for 20-30 minuties. 

Here in bulgaria we serve it with yorugt and garlic sause, but in Turkey mostly it is served with lemon slices.
 

How to make turkish manti

This was actually our first try of making manti. And we probably made a lot of mistakes. But it was really fun and yummy. First of all classic mant must be more little than that, but this was best we could do at that time:


For the dough :
4 cups flour
1 coffee cup of water
1 egg
 2 teaspoons salt

For the filling :
half an onion
300 g minced
parsley
salt
black pepper

First knead a dough from the ingredients for it. It may seem very small  at the begining but this dose is enough for 4 portions. In our case it was enough for 5 people. 
Begin making the dough with placing the flour into large bowl. In the middle make  a hole where you should add the egg, water and salt. Result must be a stiff dough. 
After that leave it to rest for 1-2 hours. In our video we didn't have time for that so the part for leaving the dough was just a demonstration. 
During which time we prepared stuffing. Chopped onion is mixed with minced meat , parsley and salt and pepper.



Then deceased dough is rolled sufficiently thin , as shown in the video. Cut into small squares.

In the middle of these squares you should put very little part of the filling and then close the manti with the method shown in the video.

Prepared manti must boil in water, as you make any other type of pasta. And serve with sause prepared from yogurt and garlic. On top of that put some red fried in oil red peper or homemade ketshup.
