Turkish sarma/ Turkish dolma recipe

Hello guys, i have shared our recipe for turkish sarma on the video below, but i must not that it is not correct to call it dolma, dolma means stuffed and its corretly used for sutffed peppers, mushrooms, zuccini or any other vegetables.

Bohca boregi



Igredients:
For the dough:
2 eggs
juice of 1/2 lemon
1 coffee cup of vegetable oil
1 coffee cup of water
flour (and you can add starch)

For the filling:
500 gr minced meat
2 onions
olive oil
parsley
black pepper
salt

First start with preparing with filling:
put some olive oil on a pan and fry the onions until they become transparent and add the minced meat. When the meat is ready add salt, black pepper and parsley.

For preparing the dough first mix all the fluids : eggs, water, juice of lemon and oil. When start adding the flour until you get a good consistency of the dough. Let it rest for half an hour and then make 15 little and even balls out of the dough and roll them out.
Put some olive oul on the rolled our dough and wrap them into square shape. Add the meat filling in half of the squares and wrap them into triangles.

Kebab with spinach

kebab is made from :
400 g minced meat
4-5 slices of bread
a little milk
1 egg
1 onion ( grated )
salt
black pepper

Meat is kneaded and placed at the bottom of a pan and bake it on oven of 180 degrees. When it is almost ready u can add the topping with spinach.
topping :
2 tablespoons flour
glass of milk
100 g mushrooms
500 g spinach
1 chopped onion
1 pepper
shredded cheese
salt

Fry the onions  on little oil first then add the mushrooms and pepper. Later add spinach after  itgets cooked put the flour and milk and add salt.
Pour meatball with topping evenly on top and sprinkle with cheese then bake in the oven for another 10 minutes.

How to make turkish manti

This was actually our first try of making manti. And we probably made a lot of mistakes. But it was really fun and yummy. First of all classic mant must be more little than that, but this was best we could do at that time:


For the dough :
4 cups flour
1 coffee cup of water
1 egg
 2 teaspoons salt

For the filling :
half an onion
300 g minced
parsley
salt
black pepper

First knead a dough from the ingredients for it. It may seem very small  at the begining but this dose is enough for 4 portions. In our case it was enough for 5 people. 
Begin making the dough with placing the flour into large bowl. In the middle make  a hole where you should add the egg, water and salt. Result must be a stiff dough. 
After that leave it to rest for 1-2 hours. In our video we didn't have time for that so the part for leaving the dough was just a demonstration. 
During which time we prepared stuffing. Chopped onion is mixed with minced meat , parsley and salt and pepper.



Then deceased dough is rolled sufficiently thin , as shown in the video. Cut into small squares.

In the middle of these squares you should put very little part of the filling and then close the manti with the method shown in the video.

Prepared manti must boil in water, as you make any other type of pasta. And serve with sause prepared from yogurt and garlic. On top of that put some red fried in oil red peper or homemade ketshup.
