Turkish sarma/ Turkish dolma recipe
Hello guys, i have shared our recipe for turkish sarma on the video below, but i must not that it is not correct to call it dolma, dolma means stuffed and its corretly used for sutffed peppers, mushrooms, zuccini or any other vegetables.

Dough for pastry
For the dough :
About 1 kg of flour
1 packet of dry yeast
3 pinches of sugar
1.5 teaspoons of salt
half a cup of yogurt
1 egg
half a teaspoon of baking soda
about 200ml lukewarm water
Flour is placed in the cup, making a hole in the middle of the flour to place a dry yeast and 3 pinches of sugar. Pour a little lukewarm water on top and let the yeast to swell. Then add salt, a half cup yogurt , 1 egg, half teaspoon baking powder, lukewarm water and knead dough.
When the dough is ready put it into oiled cup to rest. Be sure to cover it with a towel.
The dough is cut into small bites and ranks in an oiled tray. These were in the video bit large, but usually make them smaller.
Then prepare for topping:
1 egg
half a cup of yogurt
cream
cooking oil
salt
Topping is placed over the dough and bake on preheated oven in 180 degrees.
Other recipe with same dough is:
Roll the rest of the dough into thick layer. Put melted butter on top of it. Distribute some cheese on it and dried red peper and cut it in 2 pieces. Make rolls with both parts and cut the rolls and place them in tray. On top put some egg yolk and sesame and other spices that you like. Bake it in preheated oven in 180 degrees.

Sarma
Sarma is our family tradition on special days, holidays and every event when the whole family is together. Here is the recipe of our sarma.
Make the filling
It takes
1. onion
broth (optional)
water
150 g bulgur
150 g rice
Chop finely and fry in tendzheta then add water and broth
and allow to boil water. After that rice is first added and after 5 min the
bulgur . If the water is not enough , you can add a little more.
Once the rice is ready to put in a large pot where added :
1-2 eggs
mint (if fresh even better )
black pepper
cheese
1-2 tablespoons chutney
Salt
Other
spices that you like
Mix well .
Then in the bottom of the pan put 2-3 rows vine leaves . After being wound in
the manner and Sarmite shown below in the clip.
Sarmite arrange in pan. Pour necessarily with olive oil, if
you use normal oil sarma
will become sour and leaes
won’t be as soft as it would be with olive oil. One sugar and a little
water, and place 2-3 rows of
leaves and put a plate on top, so they wont open while boiling
Boil it for
20-30 minuties.
