Turkish sarma/ Turkish dolma recipe
Hello guys, i have shared our recipe for turkish sarma on the video below, but i must not that it is not correct to call it dolma, dolma means stuffed and its corretly used for sutffed peppers, mushrooms, zuccini or any other vegetables.

Lentil balls
Ingredients:
1 cup of red lentil
1.5 cup of bulgur
1 onionparsley
1/2 cup vegetable oil
2 green onions
2 tbsp of tomato paste
salt
cumin
red pepper powder
black pepper
Start with washing the lentil and bulgur separately. Boil them also separately and once they are ready mix them together.
In another pan put some vegerable oil together with the chopped onion. Once it is ready add it to the lentil and bulgur. Add chopped parsley, green onions, salt, cumin, red pepper powder, black pepper and some tomato paste and mix them together.
After that i served it using ice cream spoon.

Bohca boregi
Igredients:
For the dough:
2 eggs
juice of 1/2 lemon
1 coffee cup of vegetable oil
1 coffee cup of water
flour (and you can add starch)
For the filling:
500 gr minced meat
2 onions
olive oil
parsley
black pepper
salt
First start with preparing with filling:
put some olive oil on a pan and fry the onions until they become transparent and add the minced meat. When the meat is ready add salt, black pepper and parsley.
For preparing the dough first mix all the fluids : eggs, water, juice of lemon and oil. When start adding the flour until you get a good consistency of the dough. Let it rest for half an hour and then make 15 little and even balls out of the dough and roll them out.
Put some olive oul on the rolled our dough and wrap them into square shape. Add the meat filling in half of the squares and wrap them into triangles.

Pogaca - easy and yummy buns
Poachata is very easy and delicious type of buns.
1.5 yeast powder (actually 1 package would be enough)
1.5 cups of milk
1 cup vegetable oil
3-4 eggs , 2 yolks are separated for using to brush the buns before baking
3-4 tablespoons sugar
1 tablespoon salt
Around 1 kg flour
First, put the flour into a basin , where the dough will be kneaded. Make a hole in the middle of the flour and put the yeast . Pour the warm milk and if using dry yeast must wait to swell . Then add all other products ( oil, eggs , sugar, salt ) and kneads dough.
Then shape the cakes in the form of nodules . Although mine were not very successful , somewhat resembling a snail ....
And let them rest.
After two hours they smear the top with egg yolk and sprinkle with corrections choice - poppy seed choroltu , sesame.
And bake at pre-heated oven.

easy way to make baklava
Making baklava was not as difficult as most people think.
First take a pan , if rectangular would be much more
convenient for the shape of the bowl. Oil the pan and start placing sheets for
baklava. First you need to
place like 4 to 7 sheets on the bottom of the pan. Then put chopped walnuts. After
that place 3-4 sheets for baklava then plae more walnuts until you get the
desired thickness of the baklava.
Next step
is to cut the baklava. You should cut it before baking and you will need very
sharp knife and assistance to do it. Usually father is helping us with that
part so the shapes are equal and very cimetric.
After that
you should melt butter and oil with it the surface of baklava, being carefull
not to remove any of the sheets on top, because it is already cut.
After that
bake it in preheated oven until it gets golden brown color.
For
preparing syrup for baklava you need 1 lt water and 1 kilogram sugar. Add
vanilla and lemon to it and boil it.
After
baklava is baked you should add the syrup.
Be careful!
If syrup is
hot you baklava must be cold, or if ur syrup is cold baklava must be hot.
In out case
we always prefer syrup to be hot and baklava cold.
Let it rest
for 1 day and eat!

Dough for pastry
For the dough :
About 1 kg of flour
1 packet of dry yeast
3 pinches of sugar
1.5 teaspoons of salt
half a cup of yogurt
1 egg
half a teaspoon of baking soda
about 200ml lukewarm water
Flour is placed in the cup, making a hole in the middle of the flour to place a dry yeast and 3 pinches of sugar. Pour a little lukewarm water on top and let the yeast to swell. Then add salt, a half cup yogurt , 1 egg, half teaspoon baking powder, lukewarm water and knead dough.
When the dough is ready put it into oiled cup to rest. Be sure to cover it with a towel.
The dough is cut into small bites and ranks in an oiled tray. These were in the video bit large, but usually make them smaller.
Then prepare for topping:
1 egg
half a cup of yogurt
cream
cooking oil
salt
Topping is placed over the dough and bake on preheated oven in 180 degrees.
Other recipe with same dough is:
Roll the rest of the dough into thick layer. Put melted butter on top of it. Distribute some cheese on it and dried red peper and cut it in 2 pieces. Make rolls with both parts and cut the rolls and place them in tray. On top put some egg yolk and sesame and other spices that you like. Bake it in preheated oven in 180 degrees.

Kebab with spinach
kebab is made from :
400 g minced meat
4-5 slices of bread
a little milk
1 egg
1 onion ( grated )
salt
black pepper
Meat is kneaded and placed at the bottom of a pan and bake it on oven of 180 degrees. When it is almost ready u can add the topping with spinach.
topping :
2 tablespoons flour
glass of milk
100 g mushrooms
500 g spinach
1 chopped onion
1 pepper
shredded cheese
salt
Fry the onions on little oil first then add the mushrooms and pepper. Later add spinach after itgets cooked put the flour and milk and add salt.
Pour meatball with topping evenly on top and sprinkle with cheese then bake in the oven for another 10 minutes.

How to make turkish manti
This was actually our first try of making manti. And we probably made a lot of mistakes. But it was really fun and yummy. First of all classic mant must be more little than that, but this was best we could do at that time:


For the dough :
4 cups flour
1 coffee cup of water
1 egg
2 teaspoons salt
For the filling :
half an onion
300 g minced
parsley
salt
black pepper
First knead a dough from the ingredients for it. It may seem very small at the begining but this dose is enough for 4 portions. In our case it was enough for 5 people.
Begin making the dough with placing the flour into large bowl. In the middle make a hole where you should add the egg, water and salt. Result must be a stiff dough.
After that leave it to rest for 1-2 hours. In our video we didn't have time for that so the part for leaving the dough was just a demonstration.
During which time we prepared stuffing. Chopped onion is mixed with minced meat , parsley and salt and pepper.
Then deceased dough is rolled sufficiently thin , as shown in the video. Cut into small squares.
In the middle of these squares you should put very little part of the filling and then close the manti with the method shown in the video.
Prepared manti must boil in water, as you make any other type of pasta. And serve with sause prepared from yogurt and garlic. On top of that put some red fried in oil red peper or homemade ketshup.
